Idiot Proof With… Whatever :-)

This tomato based sauce is packed with superfree ingredients and can be made with whatever protein you like.  It’s a firm favourite in our house (nicknamed “Idiot Proof” by my better half, who says “Even an idiot like me can manage making it…”) and we have it with chicken, tuna, or smoked salmon usually.

Instructions

  • 1. Fry up the onion and garlic with some Fry Light; once they're on the way to being cooked, add the tomatoes and herbs and leave it until it starts to make up a sauce. Add some tomato puree at this stage if you prefer.
  • 2. If you're making the chicken variation, add the chicken at this stage and let it cook.
  • 3. Add all the chopped veggies and chilli if you're using it, and allow them to cook.
  • 4. If you're making the tuna/smoked salmon variation, add it once the veggies have cooked and give it a few minutes to heat through/cook.
  • 5. Serve with basmati rice or with pasta.
